Respectful to the “Produce” and the seasons, my Cuisine at L’Oustalet is inspired by my Mediterranean culture. The concept of “natural” is the basis to my cuisine and the importance of the richness of our “terroir” is a strong belief for us. Growing our own vegetable garden was an essential step and helps me in our approach and heightens my values. I am sensitive to the winemakers work because in my eyes, “Wine” is inseparable from food. This is the basis for our creation on the food and wine match menu. A simple and precise Cuisine that creates “the Essential”.
